Avocado and Balsamic Watermelon Skewers
Isn’t this plate gorgeous? It reminds me of a Lilly Pulitzer dress or a Vera Bradley bag. So “Springy.”
It’s also perfect for my ever growing tummy. Now that I am turning the corner into my last month of pregnancy I’m finding that heavy foods in large quantities do not work for me at all.
I crave light and fresh meals that I can snack on through the day (and that’s about the only thing I can keep down).
These are so cute that I might make them for my upcoming baby shower on Sunday. My mom has planned so many cute treats. I can’t wait to share the photos with you!
P.S. I wasn’t sure if I wanted to post a blog today after what happened yesterday in Boston. My thoughts and prayers are with all of Boston and those committed to finding the coward who did these terrible things and making sure justice is served.

Avocado and Balsamic Watermelon Skewers (adapted from A Cooks Memoir)
1/4 Seedless watermelon, cut into 2-inch cubes
1 Tablespoon fresh lemon juice
2 Tablespoons grated lemon zest
1 Avocado, cut in large chunks
2 Tablespoons balsamic vinegar
1. Toss cubed watermelon in a large bowl with balsamic vinegar, lemon juice and salt.
2. Skewer a piece of avocado, then a watermelon cube on a bamboo skewer. Top with pinches of lemon zest.
