Mango and Black Bean Tacos with a Coconut Cream Sauce
My friend Maggie and I hosted our good friend Ericka‘s bridal shower this weekend. She is getting married in Jamaica next month so we thought it would be perfect if her shower was tropical themed. (More photos and party treats coming soon)
At first I thought I would make some kind of a jerk chicken slider but then I saw this recipe on Pinch of Yum.
The tangy and sweet mangoes mixed with the salty black beans and incredible coconut cream sauce (seriously I wanted to drink it) was the perfect combination of flavors. They were light and easy to serve and kept our vegetarian friends happy too.
The only thing I changed was the corn tortillas. They need to be served warm or they are grainy so I used flour tortillas instead.
Mango and Black Bean Tacos with a Coconut Cream Sauce (Serves 4)
2 diced mangoes
20 oz. black beans (about 1 1/2 cans)
3-4 tbs. diced red onion
1 tbs. diced jalapeno
1/3 cup coconut milk
2/3 cup sour cream
1 tbs. white sugar
olive oil, salt, pepper
a handful of fresh cilantro
