Whipped Feta and Grilled Asparagus on a Crostini

Doesn’t the word “whipped” make everything sound decadent and luxurious? This whipped feta is exactly that.

I sat on my new deck (with new patio furniture) this weekend and snacked on a toasted whole wheat french bread crostini topped with whipped feta and grilled asparagus.

Drizzled with olive oil …

Topped with some lemon zest…

Sunday afternoons don’t get much better than that.

I’ve been trying my best to really enjoy those little moments to myself. It’s been hard to get much time for “us” lately and the baby isn’t even here yet.

We have been feverishly preparing for house guests for the baby shower this weekend and putting together not just the nursery but the whole new house. It feels like this has been going on for months.

I made my husband a crostini too. He deserves some decadence even more than me since he has been working so hard.

It should be quiet soon. We have the whole month of May to slow it down a little. It won’t last long though.

Whipped Feta and Grilled Asparagus on a Crostini

6 oz. crumbled feta cheese
2 oz cream cheese
French bread for crostini
Grilled asparagus (how to here)
Olive oil and lemon zest

1. Place your crumbled feta and cream cheese in a food processor.

2. Whip the cheeses together for at least 5 minutes. I was worried at first that it wasn’t getting light enough but you really have to let it blend together for awhile to get the right consistency

3. Spread on your toasted french bread and top with grilled asparagus (or sliced cherry tomatoes) drizzle with olive oil and sprinkle on some lemon zest.
