Easy Chocolate Mojito and a Giveaway
A couple of years ago my girlfriends and I went out for dinner at Co Co Sala in Washington DC. To drink I ordered a co cojito (chocolate mojito) and it was so good that after all this time I still think about it.
Since my girls nights are non existent right now I decided to try and make it on my own.
Even though I can’t go out to fancy restaurants in DC for dinner (little man goes to bed at 6:30ish) I think it’s really important to find ways to reward myself, even if it’s as simple as a girly drink.
A couple times a week I make sure I take a longish bubble bath after Austin falls asleep or I put on a face mask and paint my nails. One day I was even able to get a pedicure on my lunch break at work.

I used the mint flavor for my chocolate mojito above and can’t wait to see what I can create with the strawberry syrup.
Chocolate Mojito (Makes 2 cocktails)
1 cup Sprite or Lemon Sparkling water
Juice of 1 lime
2 shots chocolate flavored (or regular) vodka
2 shots mint flavored Not so Simple Syrup
10-15 mint leaves
2 cups of crushed ice (or one cup small ice cubes
4 tablespoons of chocolate shavings
1. Pour your lime juice vodka and Not so Simple Syrup (can replace with regular simple syrup) into a cocktail shaker. Add half of your mint leaves (give them a strong slap with you hands to release the flavor and scent or muddle them).
2. Add your ice and give it a good shake. Pour into your glasses and top it off with your sparking water or lemon lime soda. Add more ice if you need to fill the glass further.
3. Top with chocolate shavings and the rest of your mint.
