Semi Homemade Caramel Apple Cupcakes and an Austin Update

While I was shopping last week I saw this “Caramel Apple” cake mix and frosting.

I had no reason to make cupcakes. I certainly shouldn’t have been eating them myself … but they just looked so good that I had to buy them.

I used to bake because it’s therapeutic but life got too busy and I stopped. I want (need) to get back to that.

When it comes to baking, I’m not one to make my own cake, I usually buy boxed but I always make my own frosting.

After tasting this frosting I remembered why. So sweet, too sweet for my taste. After a few little tweaks (adding some cream cheese to the frosting) it was perfect though.

We bought some candy corn too for cupcake toppers. Tis the season.

Austin got his first jack-o-latern for trick or treating. We plan to take him around our cul-de-sac and then stop buy a few friends houses.

You know I’m just going to eat all his candy.

We also went to a pumpkin patch! Austin was way too little for the rides or animals at “Great Country Farms” but it was fun to walk around with him.This weekend we will carve our pumpkins and I can’t wait to take pictures of Austin in his Halloween costume.

Austin Update: He is still coughing. We went to the doctor again last week and they put him on some oral steroids. It was only a five day dosage. It worked for the first three a little and we got some sleep but last night and the night before it was back to being up every couple hours for at least an hour.

They think that he has caught bronchitis three times back to back

It breaks my heart that he is so sick all the time. He coughs so hard at night sometimes he can’t breath for a few seconds and it scares the crap out of me.

It’s also hard to read some of the baby blogs that tell me we should be sleeping through the night by now. Because of his cough we are not even close. I’m not sure how I make it through the day at work without falling a sleep on my desk … strangely I don’t even feel tired during the day.

How long can a baby have bronchitis for?

I’m not going to list how to make these cupcakes — it’s on the box! But I do recommend adding 8 oz of cream cheese to about half of the can of frosting so you don’t have a sugar over load.

    Those cupcakes look pretty good for boxed! Super cute for Halloween. 🙂

    That IS so scary about Austin not being able to breathe. That would totally freak me out, too. I hope he gets better soon, so you can catch up on sleep!

    what a smart idea (adding cream cheese to bring down the sweetness in store-bought frosting). And YUM
