White Chocolate Jello Shots with Raspberries
With the holidays quickly approaching, for next few months I plan to focus only on cocktails and other holidays treats (woo hoo party time!).
Enter my latest creation … the “White Chocolate Jello Shot”.
I was really excited to try the “Arctic White” flavor first and guess what? DELISH.
Creamy, white chocolaty but still light and just the right amount of booze to let you know these shots mean business.
They are almost like a boozy panna cotta dessert.
I topped them with a raspberry for extra flavor and the combination was perfect. You could also serve them with strawberries or a number of other toppings.
Decorative straws cut into smaller sizes and stuck in the shot glass (after they firm up) is a cute and clean way of extracting the jello shot as well.
White Chocolate Jello Shots with Raspberries (Makes 12 shots)
Plastic shot glasses (I buy these from Amazon)
1 envelope Knox gelatin
1/2 cup water
1/2 cup evaporated milk
1 envelope Land o Lakes Arctic White Hot Cocoa (These come in individual packets and most grocery stores carry them)
1/4 cup sugar
1/2 cup Pinnacle Whipped Vodka or alcohol of choice
Raspberries to topping (at-least 12)
For a kid friendly, non-alcoholic version just use cold water instead of vodka.
1. Mix your 1/2 cup water with your envelope of white hot chocolate in a medium sized sauce pan. Whisk it to make sure all the chocolate is combined. Add the 1/2 cup of evaporated milk, whisk again.
2. Sprinkle your gelatin on top and let it sit a few minutes. Turn on low/medium heat and mix the gelatin until all is combined.
3. Add 1/4 cup sugar and simmer slightly until sugar is combined. Pour in your 1/2 cup of cold vodka.
4. Pour white chocolate jello immediately in shot glasses and let set for at least 2 hours. Top each shot with a raspberry before serving.
